Pacific Gem has been around since 1987, but has seen a recent resurgence in use by microbreweries and homebrewers. It is a beautiful bittering hop (13-16% AA) that also possesses a good balance between Cohumulone, Myrcene, and Humulene. Pacific Gem is perfectly suited for stouts with an aroma of toasted oak that blends with ripe blackberries and sweet citrus.
